Description: Jersey cattle are the smallest of the dairy
breeds. A mature cow weighs about 1,000 pounds. Jerseys are also
noted for their early maturity. Their coat color is usually a
shade of fawn; however, cream, gray-brown, gray, and brown are
common and some are almost black. Jerseys may be spotted with
white; this variation is called colored. Jersey cattle show very
marked refinement about their heads and shoulders, carry long,
straight top lines, and usually carry out long and level at the
rump. For their size, they are usually deep in the body and full
and deep in the barrel.
