Minnesota Zoo Partners with Lancer Hospitality in new “Zoo Farm to Fork” Project Apple Valley, MINN – August 9, 2011: The Minnesota Zoo has partnered with on-site caterer, Lancer Hospitality in a new sustainability program called the Zoo Farm to Fork Project. he Zoo Farm to Fork Project provides Lancer Hospitality with fresh, locally grown and sustainable vegetables from the Zoo’s garden at the Wells Fargo Family Farm. The Wells Fargo Family Farm is a fully functional, working farm, which includes planting and harvesting various crops such as Big Boy and cherry tomatoes, jalapenos, bell peppers, Romaine lettuce and cucumbers. A variety of herbs such as cilantro, parsley and basil are also harvested fresh from the gardens. This sustainable garden program is managed mostly by Zoo volunteers David Schmidt, Bob Erickson and Sara Klasky. Klasky is a master gardener and assisted in the design for the garden plot. By using the products of the Farm to Fork Project, Lancer Hospitality is helping to reduce the consumption of fossil fuels that are used in the transport of food, as well as reducing the amount of packaging materials for the pre-packaged and processed food on their menus.
